Bench Knife
Bench knife is a
functional knife used for cutting lightweight board. The knife has two
blades, one blade is curved and attached to the handle and the other
blade is drilled and countersunk so that it can be bolted to the bench.
  
The blade is firmly set in a hardwood handle. Bench knife is not
actually a knife, it is ideally used as a scraper and so it is commonly
called a scraper. It helps to handle the dough when the dough is too wet
to fold with your hands. It also scrapes the dough off the work surface.
