Braising Pan

Braising is a slow moist heat cooking method using a small amount of liquid with a tight fitting lid. A special pan termed as braising pan is used for the purpose. The pan is a round or oval shaped pan with two stay cool handles. It has a wide cooking surface for browning and also has high sides to hold both a roast and the liquid for simmering.
