Couscoussier

Couscous comes from a Maghreb Arabic term kuskusu, meaning a food that consists of grains made from semolina. Couscous is a North Africa pasta made of crushed and steamed semolina. A traditional steaming and cooking utensil used in the preparation of couscous is termed as couscoussier or Couscous pot.

In Northern Africa the word couscous is also used for a dish of stewed meats and vegetables that is served with pastas. So couscous pot is also used to cook meat and vegetables as well.

Couscoussier is made of two tired rounded pots that separate the ingredients. It consists of two parts :
  • The lower pot is a cooking pot, usually round on the sides. The top pot has holes in its bottom that admit steam from the lower pot. The couscous is cooked in the top pot.
  • The upper part is a second pot with a lid that fits snugly on top of the bottom pot. The stew is cooked in the lower pot.
