Grill pan is a
skillet with ridges that is used to stimulate grilling on the stove top.
The ridges raise the food off the bottom surface of the pan which helps
prevent the food from steaming as it cooks. It also drains away the fat
from the food and collect in the spaces between the raised ridges. These
pans are excellent for firm vegetables, shrimp, pork chops, hamburgers,
hot dogs, oily fish and thin steaks.
