Jelly roll pans are used for cookies, sheet cakes and
jelly rolls. It is a versatile surface for baking an ample supply of
treats. Non stiick coating resist warping and transmit even heat. These
pans are generally lined with parchment paper prior to baking for a
clean release.
Lining of Jelly Roll Pans
These are generally lined with parchment paper or waxed paper.
- Cut an oblong strip of paper 2 inches longer than your pan.
- Lightly butter pan.
- Starting at the upper left corner of the pan, lay the paper on
the bottom of the pan, aligning it along the far side of the pan
without extending it up the side.
- With the point of a sharp paring knife, trim the excess paper
along the creased on these two sides.
