Grill is a broil under high heat or over hot coals.
Griddle is a flat metal plate used for cooking. It may
be permanently attached to its heat source similar to a hot plate or an
electric frying pan. It is mostly used for cooking on a grill.
Kitchen grills are of the following types
- Gas Fueled Grills : They use propane or natural
gas as their fuel source, with gas flame either cooking food
directly or heating grilling elements which radiates the heat
necessary to cook food.
- Charcoal Grills : They use charcoal briquets as
their fuel source. The briquet's, when burned transforms into embers
radiating the heat necessary to cook food.
Kitchen griddles can be electric or gas griddles
- Gas Griddles : The surface of gas griddle is
most commonly made from flat, rolled steel, which is extremely
durable, or chromium plated steel.
- Electric Griddle : They use a thinner steel
plate than gas models. They heat all the way to the edge of cooking
surface and eliminate hot spots created by gas burners. They also
create a uniform temperature across the cooking surface.
They are further classified as
- Grooved Griddles : They have a slightly sloping
top with raised ridges that give steaks. Food rest on top of the
grooves and creates sear lines similar to charbroiling.
- Flat Griddles : They have smooth surface and
are easy to clean.
- Clamshell Cookers : They cook from both the
sides at the same time.
