Sharpening Stone
Sharpening stones
are very hard and grained materials used to sharpen knives. The best
sharpening stones are industrial diamonds embedded in plastic or metal.
They are expensive but still affordable. They cut about twice as fast as
other stones. There are still other stones that are used.
 
- Ceramic stones are very often used without any
type of oil. They do not wear out.
- Water stones come in fine grits. They are
stored in water and develop a layer of slurry which helps polish off
the edge. These are most costly.
Using a Sharpening Stone
- Use a wet or dry sharpening stone.
- Place the stone flat on a stable surface.
- Hold the knife and place it at an angle of 10 to 15 degree to the
stone.
- Draw the knife towards and across you.
- Repeat the process several times.
