The zest or outer peel of a citrus contains all of the highly flavored
and fragrant natural oils. Just below the zest is the bitter tasting
white pith. A good quality citrus zester is required to remove the zest
and leave behind the pith. The zester removes the zest in fine threads,
which can be minced as an alternative to grating.
Types of Zester
- Single Headed Zesting Tool - It consists of a
handle at one end and small cutting holes at the other. The edges of
the zester are pretty sharp, and dig nicely into the fruit. At the
same time, it doesn't dig too deep, and doesn't yield pieces of zest
that are too big.
- Grater or Rasp Styled Grater - It is a long
narrow tool with sharp teeth to carve out bits of the peel.
